011514_356LeftoversRJoe’s mom sent leftovers for our dinner last night. We stopped and got some rotisserie chicken to cap it all off.

But let’s be honest. The best part of the meal, by far, are the mashed potatoes.

What we like to do is make potato patties out of the mashed potatoes. I mix in garlic, crushed red pepper flakes, salt and pepper into the potatoes and then divide them into two separate balls.

Then I roll them in flour and flatten them out into 1/2 to 2/3 of an inch thick patties. Then I fry them in olive oil in a skillet for about 5 to 10 minutes.


I would have photographed them, but we ate them immediately. This is what was left over for the shot.
