Banana Walnut Muffins

 

 

I have both of Gwyneth Paltrow’s cookbooks, and this muffin recipe is from her first one, “My Father’s Daughter.”  It is very easy to make, and pretty healthy. I, as usual, used what ingredients I have in my house, so it’s a little altered from hers.

Banana Walnut Muffins

1/4 cup plus 2 tablespoons canola oil
1 cup whole spelt flour
1 cup white spelt flour
1/2 cup barley flour
1 teaspoon baking soda
1 teaspoon fine salt
3 very ripe medium bananas
1/2 cup real Vermont maple syrup
1/4 cup brown rice syrup
1 tablespoon vanilla extract
1/2 cup raisins
1/2 cup toasted walnuts, chopped

(I can never find spelt flour, so I used unbleached all purpose and unbleached whole wheat flours. I also did not have barley flour, so I just used 1/2 cup of the whole wheat in its place. Also, I used 3/4 cups of maple syrup because I can never find rice syrup either.)

Preheat oven to 350 degrees. Line a 12-cup muffin tin or oil them with 2 tablespoons of the canola oil.

Sift the flours, baking soda and salt into a medium-sized bowl. Puree the bananas in a food processor or blender and then add the 1/4 cup of canola oil, syrups and vanilla and pulse to combine. Make a well in the flour mixture and pour in the liquid mixture. Stir just to combine and fold in the raisins and walnuts. Do not over mix or the muffins will be tough. Use an ice cream scoop to distribute the batter evenly among the muffin cups. Bake for about 25 minutes or until a toothpick tests clean. Cool in pan for a few minutes before removing to a cooling rack.

Date Ice Box Cookies – (Aunt Lucy)

DateIceBoxCookiesAboveTonedReadI love dates. So any recipe that contains them gets my attention pretty quickly.

I have no idea who Aunt Lucy is, but that is how it was printed in the newspaper article that my great grandmother cut out for her collection. Unfortunately there is no date (no pun intended) on the clipping. But Mama died in 1976, so it was way before then.

These are pretty good. Not too sweet. I think they will make a good compliment to coffee. They are pretty easy to do and they make a ton.

Date Ice Box Cookies 

Filling:
1 pound chopped dates
1 cup chopped pecans
1/2 cup sugar
1/2 cup water

Cook mixture together until thick. (In a medium-sized pot on a low heat. I stirred frequently.)

Cookie dough:
1 1/2 cups brown sugar
1/2 cup white sugar
1 cup butter
2 eggs
3 1/2 cups sifted flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon vanilla

Cream together sugars and butter. Add eggs one at a time, beating well. Sift dry ingredients together and add to mixture. (You may need a little bit more flour) – I definitely did need to add some.    Add vanilla.

Divide the dough into three equal parts. Roll dough about 1/4-inch thick. Spread filling onto dough and roll tightly into tight, oblong stick. Put cookies in refrigerator until well-chilled or store in freezer. Slice and bake 10 minutes at 350 degrees.

Orange Nut Bread

(I altered this one a bit for two reasons: 1. I wanted to start using gluten-free flour to possibly curb the number of migraines I’ve been having, and 2. I didn’t have all of the ingredients, as usual.)

2 1/4 cups all purpose flour (I used gluten-free plus 3/4 teaspoons Xanthan Gum for every cup of flour. This helps keep the bread firm)
3/4 cup sugar
2 1/4 teaspoon baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
3/4 cup chopped nuts (I used almonds because I didn’t have any walnuts)
1 tablespoon grated orange peel ( I used lemon. No oranges in the house)
I beaten egg
3/4 cup orange juice
2 tablespoons salad oil (I assumed this meant canola oil)

I also added 1 cup craisins soaked in boiling water to plump them up.

Sift together dry ingredients. Stir in nuts and orange peel. Mix egg, juice and oil. Stir into dry ingredients until just moist, then fold in craisins. Pour into greased loaf pan. Bake at 350 degrees for 55 minutes or until done. Remove from pan and cool on rack. Wrap and store overnight.

It turned out pretty good. It’s really good with coffee.
